A process for treating waste obtained from the processing of animal or fish carcasses to give treated waste having lower concentrations of both fatty acids and ammonia relative to the waste prior to treatment includes: a) Contacting the waste with one or more enzymes to hydrolyse proteins in the waste to give a waste hydrolysate mixture containing addition to proteins and hydrolysed proteins, fatty acids and ammonia. b) Removing ammonia from the waste hydrolysate mixture by contacting the mixture with steam to give a steam/ammonia gaseous mixture and a steam treated with hydrolysate c) Contacting the steam treated hydrolysate with one or more enzymes to convert fatty acids to carbon dioxide and methane to give a treated waste.
