Abstract

A process for obtaining high purity glycogen form mussels comprising: 1) treating the mussels with a proteolytic enzyme preferably papin, pepsin or Alcalase, in water for approximately 3 hours at approximately 70oC, to give a slurry of solid residue and an aqueous solution of glycogen; 2) separating the solid residue from the aqueous solution by adding ethanol; 3) recovering the glycogen from the aqueous solution, said glycogen exhibiting anti-inflammatory activity. Also claimed is the use of a glycogen produced by this compound for treating inflammatory diseases such as arthritis, or as a food additive or supplement.
