Abstract
Whey protein concentrates are prepd as in parent patent by ultrafiltration of whey at a pH below the isoelectric point of the whey protein (esp at pH 2.7-3.3), heating before and/or after the ultrafiltration (esp to pasteurisation temp. or above), and finally neutralising or drying the product, but in this addn the ultrafiltration is carried out at elevated temps. i.e. 40-65 degrees C to give higher throughput of material.
