Abstract
Description
Method and device for removing unwanted salts and / or ions from vegetable juices.
The invention relates to a method according to claim 1. A method for concentrating fruit juice, wherein the fruit juice is pressed through a membrane filter and water is discharged from the fruit juice is known. This method reduces the volume of the fruit juice so that the transport costs are lowered. After transport, the thickened fruit juice is again diluted to its original water content and consumed as such. It has been found that applying the known method to vegetable juices has the unexpected result that the content of undesired ions present in vegetable juice, such as nitrates, is greatly reduced. This has the consequence that vegetable juices from certain vegetables such as beetroot and sauerkraut can be made suitable for consumption in this way.
Red beet juice, that is juice pressed from beetroot or juice prepared from boiling water or washing water from beetroot, normally contains about 1500 mg / l nitrate (NO3). This amount of nitrate is so high that consumption by infants is not desirable. Too much nitrate forms nitrite (NO2) in the human body. Nitrite is toxic in high concentrations and disrupts the oxygen transport through the blood.
By carrying out the method in accordance with the invention, the nitrate content in the red beetroot juice is reduced to such a level that consumption of red beetroot juice by infants and also for others is justified.
In accordance with an embodiment of the invention, the method is carried out according to claim 2. By adding an excess of water which is subsequently removed by the membrane filtration, the undesirable salts and / or ions are washed out as it were, so that the content of these salts are further and / or lowered faster.
In accordance with an embodiment of the invention, the method is carried out according to claim 3. In this embodiment, an excess of water is started, as a result of which the undesired salts and / or ions are more easily dissolved in the vegetable juice and then with the water from the water. vegetable juice can be removed. An application may also be that vegetable juice is obtained from washing water or cooking water from the vegetable.
In accordance with an embodiment of the invention, the method is carried out according to claim 4.
Adding water to the dewatered vegetable juice makes it suitable for further processing.
In accordance with an embodiment of the invention, the method is carried out according to claim 5. This allows the recirculating vegetable juice to be gradually dewatered in a continuous process.
In accordance with an embodiment of the invention, the method is carried out according to claim 6. By cleaning the vegetable juice before it is pressed through the membrane filters, contamination of the membrane filters is prevented.
In accordance with an embodiment of the invention, the method is carried out according to claim 7. Adding the preservative after the last pressing through the membrane filter prevents the preservative during the pressing with the water and the undesired salts and / or ions is removed from the vegetable juice.
33
The invention also comprises a device according to the preamble of claim 8. A comparable device is known for dewatering fruit juice.
By using the dewatering installation with membrane filtration elements, undesired salts and / or ions are also removed from vegetable juice, whereby the device makes it possible to make vegetable juice with a too high nitrate content suitable for general consumption.
In accordance with an embodiment of the invention, the device is designed in accordance with claim 9. The device according to this embodiment in which the membrane filtration elements are designed as longitudinal flow elements appears to be particularly suitable for dewatering vegetable juice.
In accordance with an embodiment of the invention, the device is designed according to claim 10. The use of such membrane filtration elements with a relatively broad specification limits the costs of the elements.
In accordance with an embodiment of the invention, the device is designed according to claim 11. The use of such membrane filtration elements ensures that no sugar molecules are pressed out of the juice, which benefits the taste of the dewatered vegetable juice.
In accordance with an embodiment of the invention, the device is designed according to claim 12. By using such membrane filtration elements, it is achieved that the pressure of the high-pressure pump required for membrane filtration can be limited.
In accordance with an embodiment of the invention, the device is designed in accordance with claim 13. By returning the dewatered vegetable juice to the storage tank where it has been pumped out by the high-pressure pump, a certain amount of vegetable juice, for example a batch stored in a tank truck, can be stored. , treated in one go and the removal of unwanted salts and / or ions. The concentration of dry matter in the vegetable juice in the tanker truck will gradually increase.
In accordance with an embodiment of the invention, the device is designed according to claim 14. This allows water to be added to the dewatered vegetable juice again, with which again undesired salts and / or ions can be pressed with the water from the vegetable juice and the concentration of these salts and / or ions can be further reduced.
In accordance with an embodiment of the invention, the device is designed in accordance with claim 15. This makes it possible to dehydrate with the dewatering installation to an adjustable dry matter content, after which the combination of the supply of water and dewatering into the dewatering installation makes the concentration of the undesirable Salts and / or ions can become increasingly lower.
In accordance with an embodiment of the invention, the device is designed according to claim 16. This prevents contaminants from contaminating the membrane filtration elements.
In accordance with an embodiment of the invention, the device is designed according to claim 17. Hereby, spoilage of the dewatered vegetable juice is prevented while the spoilage inhibiting substance is not removed during the membrane filtration.

In the drawing, corresponding work or parts are indicated as far as possible with the same reference numeral.
The first embodiment of the invention shown in Figure 1 relates to the further use of beet juice produced during processing of red beets. Red beets 1 are boiled and / or peeled from a storage facility with the addition of water 2. The cooked and / or peeled beets are removed for further use such as consumption at 4. During boiling and / or peeling, part of the red beets 1 with the water to red beet juice, this red beet juice is stored in a first storage tank at 5. From the first storage tank 5, the red beet juice is dewatered as a feed stream after a possible pre-cleaning at 9 in a dewatering installation 6, which is equipped with a high pressure pump and membrane filtration elements to be described below. During the dewatering in the dewatering installation 6 a waste water stream 7, the permeate, is formed, wherein salts and / or ions are incorporated in the water. The dewatered beet juice, the concentrate, is stored in a second storage tank 8. For use, water can be added to the dewatered beet juice, this is indicated by the broken line in Figure 1, after which ready-to-use red beet juice is produced as indicated at 11 .
In a first example, the feed stream of boiling water has such a dry matter content that the BRIX value is 2.8 and a nitrate content of 300 mg / l. The waste water stream 7, which is released during membrane filtration, the permeate, 6, has a BRIX value 1.4 and a nitrate content of 230 mg / l. The dewatered beet juice, the concentrate or retention, has a BRIX value of 19.5 and a nitrate content of 500 mg / l. After diluting the concentrate to the original BRIX value of 2.8, the nitrate content is 72 mg / l, which is a reduction of 76%.
In a second example, the feed stream of boiling water has such a dry matter content that the BRIX value is 7 and the nitrate content is 730 mg / l. The waste water stream 7 that is released during membrane filtration, the permeate, has a BRIX value of 0.6 and a nitrate content of 930 mg / l. The dewatered beet juice, concentrate or retentate has a BRIX value of 22.2 and a nitrate content of 670 mg / l. After diluting the concentrate to the original BRIX value of 7, the red beet juice has a nitrate content of 211 mg / l, that is a reduction of 71%.
The second embodiment of the invention shown in Figure 2 relates to making low-beet beet juice from red beets. The red beets 1 are pressed in a press 12 into red beet juice, the resulting pulp being separately discharged as shown with line 13. The red beet juice is optionally cleaned at 9 to prevent contamination of the membrane filtration elements and then dewatered in the 25 dewatering installation 6 and stored in the second storage tank 8. By adding water with the water stream 2, the red beet juice is made ready for use again, whereby it receives more or less the same dry matter content as before the dewatering.
With the exemplary embodiments discussed above, the process is discussed on the basis of the vegetable beetroot.
It will be clear to the skilled person that the same or comparable methods and / or equipment can also be applied to other vegetable juices. An example of this is sauerkraut juice.
Figure 3 shows a third embodiment of the invention in which in particular an embodiment of the dewatering process is indicated in Figure 1 with the broken line 10. In this embodiment there is a buffer tank 16 in which vegetable juice is stored. In some cases, the buffer tank can for instance be formed by a tank truck in which the vegetable juice is supplied. The buf-10 storage tank 16 is connected by a suction line to a high-pressure pump 17. The high-pressure pump 17 presses the vegetable juice under a pressure of 20 to 30 bar through membrane filtration elements 18. The membrane filtration elements are preferably designed as longitudinal flow filters with a pore size of 0.5 nm to 5 nm. To keep more sugars in the vegetable juice, the pores can possibly be smaller than 2 nm. Due to the small pores, a large pressure drop can occur over the membrane filtration elements, as a result of which the vegetable juice could become too hot. To limit the pressure drop, the pores are preferably larger than 1 nm. Optionally, the membrane filtration elements are resistant to a temperature of above 60-70 degrees Celsius.
The partially dewatered vegetable juice (the concentrate or retentate) is returned from the membrane filtration elements with a return flow 19 to the buffer tank 16 and the squeezed water with the undesired salts and / or ions, the permeate, becomes waste water 7 removed. Due to the drainage of the waste water or permeate 7, the level of the vegetable juice in the buffer tank 16 drops.
Provided in the buffer tank 16 is a level control 15 which operates a control valve 14 and with which the water supply 2 is controlled such that the level remains at a level to be set. In the situation where washing water is introduced into the buffer tank 16, the water is first dewatered until the vegetable juice has a certain dry matter content or BRIX value. The level in the buffer tank 16 then drops to a set level. The level control 15 then ensures that the level in the buffer tank 16 remains at this level and that the amount of discharged waste water 7 is supplemented via the control valve 14. The vegetable juice is rinsed clean, as it were. In the situation where the vegetable juice does not need to be dehydrated but only needs to be stripped of nitrates, the same amount of water as is discharged as waste water 7 is supplemented via the control valve 14. This amount of water can be greater than the amount originally contained in the vegetable amount of water present. It will be clear that the devices described above are provided with various controls with control equipment and measuring instruments. Possibly there is an automatic operating system. There is also a cleaning system for cleaning the various parts and pipes and in particular the membrane filtration elements. To prevent spoilage of thickened vegetable juices, a preservative, such as citric acid, can be added after the completion of the dewatering.
