Abstract
Heat-treated polyfructose creams contain 10-50 wt.% polyfructose. They are prepared by adding a heat-treated seed material to a heat-treated solution or dispersion of 5-50 wt.% polyfructose in water and subjecting to shear forces. The seed material is added at 0.5-50 wt.% w.r.t. the solution or dispersion, which is at a temperature such that the seed material does not go into solution.
