Abstract
Increasing the shelf life of liq. foodstuffs, partic. dairy prods., comprises \- preheating the prod. to > 80 deg C and holding it at 80-100 deg C for \- 20 secs. The prod. is then quickly heated directly by steam to 135-165 deg C to homogenise the prod. in the first or after the second stage. Also claimed is a foodstuff treated by a method as above.
