Abstract

A method for hydrolyzing polysaccharides comprising the steps of: removing air from the polysaccharides using a vacuum environment; heating the polysaccharides rapidly with a high pressure fluid; and cooling the heated polysaccharides abruptly under a vacuum environment to obtain the hydrolysed polysaccharides.
