Abstract

The present invention is related to the modification to the nixtamalization process, which reduces the power consumption. The nixtamalization is a process, which in general form, consists in cooking the maize grains in water added with lime at temperatures close to the boiling point of water. The modification of the present invention consists in performing the nixtamalization process at water temperatures of from about 48°C or 65°C, using alternate energy sources such as solar energy.
