Abstract

La presente invención se refiere a el uso de uno o más agentes quelantes seleccionados del grupo que consiste de un ácido fosfórico, ácido cítrico, una sal de fosfato soluble, una sal de citrato soluble, o una mezcla de los mismo, para controlar independientemente la viscosidad y la transparencia de una composición acuosa de caseína micelar que comprende 6 hasta 20 g/100 ml de caseína micelar, y que tiene un pH de 6 hasta 8.
