Abstract

The present invention relates to a physicochemical method to reduce levels of unwanted compounds, applying a combined treatment of ultrasound with temperature (thermo-ultrasound), which does not affect the properties of the products subjected to it. The thermo-ultrasound treatment is carried out in an ultrasonic processor, processing the samples at a constant frequency of up 15 to 25, for up 10 min to 15 min, with pulse durations of four seconds on and two seconds off. The sample is placed in a double-walled stainless steel container with water circulation at a temperature of up 45°C to 60°C, preferably 45°C, and a flow rate of up to 0.5 L/min.
