Abstract

Proceso para tratar un material de suero de leche dulce (SWM, por sus siglas en inglés) que contiene cGMP (caseinoglicomacropéptido) , que comprende las siguientes etapas: descationizar el SWM para obtener suero de leche dulce que tiene un valor de pH de 1 a 4.5; tratar el suero de leche dulce en un reactor de lecho fluidizado que comprende un volumen de una resina aniónica, a una temperatura entre 10 y 18 °C, en donde el suero de leche dulce entra en contacto con la resina de modo que la resina absorba entre 0 % y 100 % del cGMP presente en el suero de leche dulce; y recuperar un material proteico; en donde el tratamiento es tal que la resina absorbe entre 30 y 45 g/l del cGMP presente en el suero de leche dulce. Método para producir un material proteico de un SWM que contiene cGMP, en donde el material proteico tiene una relación de triptófano/treonina (Trp/Thr) específica y en donde el método comprende las siguientes etapas: - implementar el proceso de tratamiento dos veces, en donde la resina absorbe P1 del cGMP, y así obtener un primer material proteico que tiene una relación de Trp/Thr1, y en donde la resina absorbe un porcentaje P2 del cGMP, y así obtener un segundo material proteico que tiene una relación de Trp/Thr2; - representar la curva de calibración lineal en un gráfico (% de cGMP; Trp/Thr) posicionando (Trp/Thr1;P1) y (Trp/Thr2; P2) y trazando una línea a través de estos dos puntos; - determinar la relación específica de cGMP presente en el suero de leche dulce que la resina debe absorber con respecto a la relación de Trp/Thr específica según la curva de calibración; e - implementar el proceso de la invención en el SWM, en donde la resina absorbe la relación específica de cGMP, a fin de obtener el material proteico que tiene la relación de Trp/Thr específica.
