Abstract

Se proporciona una composición alimenticia que comprende burbujas de gas. Esta contiene con base en la composición alimenticia por lo menos 10% en peso de agua, opcionalmente grasa, en donde la cantidad de grasa y agua tomadas juntas es de al menos 60% en peso y menos del 99% en peso, por lo menos 1% en volumen y menos del 70% en volumen de gas, partículas de fibras y partículas activas en la superficie. El diámetro promedio ponderado en volumen de las partículas activas en la superficie (b) es menor que la longitud de las partículas de fibra (L). También se proporciona un procedimiento para preparar el producto. El procedimiento incluye los pasos de incorporar partículas activas en la superficie y partículas de fibras en una composición alimenticia líquida, incorporando gas en dicha composición líquida y empacando la composición líquida.
