Abstract

La presente invención se refiere a extractos mejoradores del sabor naturales y composiciones que los comprenden, para utilizarse en productos alimenticios y bebidas y a un método para producir los extractos. Más en particular, la invención proporciona extractos de tomate fraccionados que imparten el sabor umami mejorado que tiene algunas características muy especiales con respecto a los niveles y/o proporciones de azúcares, aminoácidos y ácidos orgánicos. Los extractos de tomate fraccionados de la invención se producen utilizando fraccionamiento de nano-filtración. Los productos así obtenidos poseen efectos de mejoramiento y/o aumento (umami) de sabor mejorados y son casi transparentes y esencialmente carecen de sabor y olor de tomate. De esta forma, a diferencia de los productos de técnica anterior conocidos este producto puede aplicarse en alimentos en cantidades sustanciales sin concomitantemente causar ningún color rojizo al producto y sin impartir un sabor u olor de tipo tomate.
