Abstract

Una composición caracterizada porque comprende: a) un edulcorante de gran proteína y b) un agente de voluminosidad soluble en agua que se selecciona del grupo que consiste de: i) una hemi celulosa A; ii) una hemi celulosa B; iii) una hemi celulosa A modificada; iv) una hemi celulosa B modificada, y v) mezclas de (i), (ii), (iii), y (iv).The present invention relates to a method of providing functional properties of fats or carbohydrates in a food product, characterized in that it comprises adding to the food product a water soluble bulking agent that is selected from the group consisting of a hemi cellulose A, a hemi cellulose B, a modified hemi cellulose A, a modified hemi cellulose B, or mixtures thereof, as a replacement for all or a portion of the fat or carbohydrate. A composition characterized in that it comprises: a) a high protein sweetener and b) a water soluble bulking agent selected from the group consisting of: i) a hemi cellulose A; ii) a hemi cellulose B; iii) a modified hemi cellulose A; iv) a modified hemi cellulose B, and v) mixtures of (i), (ii), (iii), and (iv).
