Abstract

The invention relates to the pharmaceutical and food industry and can be used for producing polyphenols from grape pomace.According to the invention, the claimed process consists in that the wet grape pomace is treated with electric alternating current with the voltage of 90…260 V and the intensity of 300…866.6 V/cm, generating 900 electric pulses with a duration of 900 µs, for 15 min, then the polyphenols from pomace are extracted with 20…80% aqueous ethanol solution, at a temperature 25…65°C, for 15…60 min, after which the extract solution is filtered, is removed the ethyl alcohol from the extract by distillation in a rotary evaporator to produce a polyphenol extract in the form of paste.
