Abstract
본 발명은 디아세틴 지방에 대한 결정 변형제에 관한 것이다. 디아세토팔미틴, 디아세토스테아린, 디아세토아라키딘, 디아세토베헤닌과 같은 디아세틴 지방의 물리적 성질은 상기 디아세틴 지방과 약 10% 내지 약 16%의, 분자 한개당 하나의 C2내지 C4의 산 잔기 및 2개의 긴, 포화된 C16내지 C22의 지방산 잔기를 갖는 트리글리세리드를 포함한 결정 변형제를 혼합시킴으로 인하여 조절된다. 개선된 스냅성, 윤기, 경도, 내블룸성, 및 이형성을 나타내는, 상기 변형된 디아세틴 지방은 식용의 코팅물, 특히 당과 코팅물로 사용하게 적합하다.

Claims (10)
- (a) 약 70% 내지 약 95%의, 분자 한개당 2개의 아세트산 잔기 및 하나의 긴, 포화된 C16내지 C22의 지방산 잔기를 갖는 트리글리세리드를 포함한 디아세틴 지방; 및 (b) 약 5% 내지 30%의, 분자 한개당 하나의 짧은 C2내지 C4의 산 잔기 및 2개의 긴, 포화된 C16내지 C24의 지방산 잔기를 갖는 트리글리 세리드를 포함한 결정 변형된 지방의 혼합물을 포함함을 특징으로 하는, 아세토글리세리드 지방 성분을 갖는 코팅 조성물.
- 감미료, 초콜릿 풍미료, 및 디아세토팔미틴, 디아세토스테아린, 디아세토아라키딘, 디아세토베헤닌, 및 이것들의 혼합물로 이루어진 그룹으로 부터 선택되며, 약 10 내지 18%의, 분자 한개당 하나의 C2내지 C4의 산 잔기 및 2개의 포화된 C16내지 C22의 지방산 잔기를 갖는 트리글리세리드를 포함한 결정 변형제를 추가로 포함하는 디아세틴 지방 성분을 포함함을 특징으로 하는, 초콜릿 당과 코팅물.

- 제1항 또는 2항에 있어서, 지방은 약 1.5% 내지 약 4%의 소르비탄 지방산 에스테르를 추가로 포함함을 특징으로 하는 조성물.
- 약 5% 내지 약 30%의, 하나의 C2내지 C4의 산 잔기 및 2개의 포화된 C16내지 C22의 지방산 잔기를 갖는 트리글리세리드를 포함한 결정 변형제를 상기 디아세틴 코팅물 지방으로 혼입시키는 것을 포함함을 특징으로 하는, 포화된 디아세틴 코팅물 지방의 결정성을 개선시키기 위한 방법.
- 제7항에 있어서, 약 10% 내지 약 16%의 결정 변형제는 디아세틴 코팅물 지방으로 혼입됨을 특징으로 하는 방법.
