Abstract
Description
The present invention relates to a method for producing tenderized mammalian meat using a natural proteolytic enzyme, wherein the prepared mammalian tenderized meat is easy to chew while maintaining its shape using a natural proteolytic enzyme, so that it can be used for food for the elderly, baby food, etc. There are advantages.
As the proportion of the elderly population increases, interest has been drawn not only to quantitative life expectancy extension but also to qualitative improvement of old age life. Health is very important in determining the quality of life, and especially dietary life acts as a factor that directly affects the health of the elderly.
As the elderly population is gradually recognized as a social problem due to the rapid increase in the elderly population, it is essential for the elderly to have physical and mental health as well as balanced nutrition intake in order to live a long and healthy life. On the other hand, teeth are lost in the elderly, and tooth loss reduces the ability to masticate, narrowing the selection range of foods that can be consumed, and reducing the quantity and quality of meals, making it difficult to maintain health. Therefore, there is a need to develop and supply food for the elderly in order to prevent diseases and maintain nutrition of the elderly.
Meat is a high-protein food and is a highly nutritious food ingredient containing various types of minerals such as zinc and iron. However, due to the tough nature of meat, it is difficult for people with chewing and swallowing difficulties and the elderly to consume it, so it is a special meal for the elderly and patients. Sufficient softening is required to use it.
As a conventional meat tenderization method, there is a method of immersing meat in natural fruit juice such as papaya, fig, pineapple, pear, kiwi, etc., a proteolytic enzyme solution derived from such fruit, wine or herbal medicine, and heating and pressurization after aging. It is being used.
As a conventional meat tenderization method, there is a method of immersing meat in fruit, wine, or the like. The immersion method, which is a conventional meat tenderization method, is a method of immersing raw meat in a softening liquid, and can maintain the shape of the product as it is, and can suppress nutrient loss and sensory quality deterioration, but only the surface is excessively softened or the manufacturing time is prolonged. There are downsides.
Protein hydrolysates can be usually prepared by enzymatic, acidic or alkaline hydrolysis methods. Acid or alkali hydrolysis methods undergo a heat treatment process. There is a disadvantage that the production yield is also lowered at the same time as the chemical quality characteristics change.
One example of the present invention relates to a method for producing tenderized mammalian meat, comprising injecting a proteolytic enzyme into mammalian meat, and aging the meat injected with the enzyme at a low temperature.
Another example relates to tenderized mammalian meat prepared by the method for producing tenderized mammalian meat.
Hereinafter, the present invention will be described in more detail.
In one example of the present invention, as the Korean Industrial Standard classifies age-friendly foods into three stages according to the hardness of the food, the test materials are set to beef rump and pork loin, and the hardness of the meat using natural proteolytic enzymes. The level of reduction is evaluated according to the injection concentration and method of enzymes, and the type and amount of natural hydrolytic enzymes that meet the hardness conditions including the 2nd level of hardness standards for aged-friendly foods that are maintained in shape using natural proteolytic enzymes , treatment conditions, etc. were selected and utilized to prepare tenderized meat having a specific hardness.
One example of the present invention relates to a method for preparing tenderized mammalian meat, comprising injecting a proteolytic enzyme into mammalian meat and aging the meat injected with the enzyme at a low temperature.
Another example of the present invention relates to tenderized mammalian meat prepared using a hydrolase, and may have a hardness of 1.5 to 5.5 N/cm 2 as measured by a texture analyzer (TA).
According to an example of the present invention, the method for preparing mammalian tenderized meat may include injecting a proteolytic enzyme into mammalian meat and aging the meat at a low temperature.
In the method for producing tenderized mammalian meat according to the present invention, the step of injecting a proteolytic enzyme into the mammalian meat may include injecting a proteolytic enzyme by immersing the raw meat in air or in salt water, or placing it on a plate in the air This can be done by injecting proteolytic enzymes. Accordingly, an example of the present invention may include immersing the raw meat in air or in salt water to inject a proteolytic enzyme, and aging the meat injected with the enzyme at a low temperature.
The brine has a salt concentration of 1 to 5% by weight, 1.5 to 5% by weight, 2.0 to 5% by weight, 2.5 to 5% by weight, 1 to 4.5% by weight, 1.5 to 4.5% by weight, 2 to 4.5% by weight, 2.5 to 4.5%, 1 to 4%, 1.5 to 4%, 2 to 4%, or 2.5 to 4%. In the case of immersing in the brine and injecting the proteolytic enzyme, there is an advantage in that the brine is coated on the surface of the raw material to help maintain the appearance of the final product.
The aging at a low temperature may be performed by storing at a temperature of 0 to 10° C., for example, by storing in a refrigerator that satisfies the temperature conditions. The low-temperature aging time may be 5 to 48 hours, 5 to 36 hours, 5 to 24 hours, 5 to 18 hours, or 5 to 12 hours, but is not limited thereto.
The method for producing tenderized mammalian meat according to the present invention may further include a step of preparing heat-cooked tenderized meat having a hardness suitable for consumption by performing a process of heating the low-temperature aged mammalian meat.
If the hardness of the tenderized meat of mammals is too low, it is difficult to maintain the appearance and is crushed, and if the hardness is too high, it is hard to chew and the degree of softening is insufficient. It is desirable to have The softening step, expressed based on the hardness values set by the Korean Industrial Standard for age-friendly foods, is 500,000 - 50,000 N/m 2 (equivalent to 50.0 - 5.0 N/cm 2 , step 1), 50,000 - 20,000 N/m 2 (5.0 to 2.0 N/cm 2 , step 2), and 20,000 N/m 2 or less (corresponding to 2.0 N/cm 2 or less, step 3), and the hardness of the tenderized meat according to the present invention includes the above two steps It can be a numerical range.

It includes about 220 species, including cows, water buffaloes, pigs, wild boars, hippos, camels, deer, giraffes, sheep, and goats. And, in one example, it may be a pig or a cow. Accordingly, the type of mammalian meat or meat used in the present invention is not significantly limited as long as it contains protein, and in one example, the mammalian meat or meat is cattle, water buffalo, pig, wild boar, hippo, camel, deer, giraffe, It may be meat or meat derived from sheep or goat, and specifically may be cow or pig meat.

The meat or meat is not particularly limited by part, and a part having a protein content of about 10% or more, about 11% or more, about 12% or more, or about 13% or more is preferable. For example, but not limited to buttock, sirloin, tenderloin, rump, hongdukkae, sirloin, seolgisal, crucible, crucian carcass, or hind leg, the fat is cut with a knife or the like before grinding the meat. It is desirable to remove it at an appropriate level by using it.
Protein hydrolysates can be usually prepared by enzymatic, acidic or alkaline hydrolysis methods, of which the enzymatic hydrolysis method is the most advantageous in terms of industrial applicability. The enzymatic degradation method is a method of dissolving and splitting proteins by allowing proteolytic enzymes to act on animal proteins such as meat proteins, and through this, soluble substances in the form of peptides can be obtained. Since amino acids that enhance the flavor of meat are released in this process, meat protein hydrolysates are used as functional materials such as flavor enhancers in the food industry. On the other hand, the acid or alkali hydrolysis method undergoes a heat treatment process, and at this time, the protein is coagulated by heat, so the physicochemical quality characteristics due to protein denaturation are changed and the production yield is also lowered.
