Tranaglutaminase효소제는 Streptoverticillium mobaraense의 배양물로 부터 추출한 후 찬 에틸 알콜로 처리하여 얻어진 효소제로 백색∼엷은 황색∼진한 갈색의 분말, 입상, 덩어리 또는 투명∼진한 갈색의 액체로 된 식품제조용 첨가물이다. 물에 용해되고 에탄올에 용해되지 않는다. 방선균에서 추출한 효소의 최적 pH는 6∼7이며, 최적온도는 50∼55℃이다. 역가조정, 품질보존 등을 위하여 희석제, 안정제 등을 첨가할 수 있으며, 흡습성이 강하므로 냉암소에 밀봉 보존하여야 한다. 이러한 Transglutaminase는 유당이나 dextrin 등의 부형제와 혼합되고 밀봉하여 Transglutaminase 1.0% 또는 그 이상의 함유량을 가지는 제품으로 시중에 판매되고 있다. 이러한 Transglutaminase 제품을 기존에 식품첨가물로 주로 사용하였으나 현재는 Transglutaminase의 특성을 이용하여 샴푸나, 에센스, 린스 등의 모발제품에 첨가하여 각종 유효성분이 두피에 밀착되어 그 성분을 지속적으로 발휘 될 수 있도록 가교 역할을 하는데 쓰이게 하는 목적이 있다. 하지만 공기 중에 불안정한 Transglutaminase효소의 특성 때문에 Transglutaminase효소제의 외부를 보호해 줄 수 있는 물질로 피복이 이루어져야 한다.Tranaglutaminase enzyme is an enzyme preparation obtained from the culture of Streptoverticillium mobaraense and treated with cold ethyl alcohol.
