Abstract

PURPOSE: A vinegar composition for improving liver activity comprising chitin oligosaccharide is provided. The chitin oligosaccharide having molecular weight of 10000 to 40000 dalton effectively improves liver activity. CONSTITUTION: A method for preparing the vinegar composition for improving liver activity comprising chitin oligosaccharide comprises the steps of: (1) boiling the shell of a crab, adding NaOH solution thereto, maturing them for 72 hours, and adding NaOH solution thereto; (2) washing the crab shell with water; (3) adding HCl into protein-removed chitin and maturing them for 72 hours; (4) washing chitin with water; (5) adding ultrasonic wave to chitin to obtain chitin oligosaccharide solution; adding 70 volume% of natural fruit vinegar and 40 volume% of water-soluble calcium into 40 volume% of the chitin oligosaccharide solution; and fermenting the mixture for 1 week.
