Description
The present invention relates to a method for producing rainbow jelly, and more specifically, by adding a natural material additive colored in color to a mixture of starch starch and potato starch to prepare a plurality of colored jelly and then laminating and molding the jelly. It is about how to make various colors in Jelly.
In general, jelly is gelatinized and molded using starch raw material or polysaccharide as the main raw material, and there are acorn jelly, buckwheat jelly, and mung bean jelly depending on the material.
It is an old, low-calorie alkaline food made using cereals or nuts such as acorns, buckwheat and green beans. It is rich in various nutrients such as protein, vegetable fat, dietary fiber, vitamins and minerals. Recently, it is attracting attention as a well-being food.
However, the conventional acorn, buckwheat or mung bean was prepared as a main raw material, the acorns are rich in starch and tannin, buckwheat is rich in vitamins, rutin, choline, etc., green beans are leucine, lysine, Bali It is rich in essential amino acids, but the acorn, buckwheat, mungbean and the like only one material has a problem that can not provide a balanced nutrition.
In addition, in the case of jelly using acorns, the astringent taste is strong, so it needs to be removed for a long time by removing the astringent taste. So, when using buckwheat and green beans, the manufacturing process is simple but easily deteriorated. Could not.
In addition, since the material of jelly is limited to acorns, buckwheat or green beans, the taste, form and color of the jelly are monotonous, and are being forgotten by younger consumers because of the taste of modern people seeking unique personalities.
In order to improve the above problems, Korean Laid-Open Patent Publication No. 2004-0092963 uses blue seaweed powder, eastern powder and amber powder to prepare blue, white and yellow jelly and then laminate and cool them to have different tastes and colors. The method of manufacturing a jelly was disclosed to meet various tastes and tastes of modern people.
Represents the natural color of the jelly prepared by the original color of seaweed powder, eastern powder and pumpkin powder, which are the main ingredients prepared in the publication, but the elasticity is lowered compared to the jelly made of acorns, buckwheat and green beans There is.
Korean Unexamined Patent Publication No. 2009-0068553 discloses a mixture of white starch powder and water, and adds tangerine juice, carrot juice, green sprout powder, green sprout juice, soy sauce, and grape juice additives to make jelly of various colors, and stacks the jelly of each color. A method for forming rainbow jelly by molding has been disclosed.
However, the chewy texture is improved by the rainbow starch powder, but separation occurs at the lamination interface, and colors of both sides are mixed with each other at the interface and the color is not clear and blurred.
Therefore, there is still a necessity to develop a jelly manufacturing method that can satisfy the visual enjoyment while improving the texture of rainbow jelly as a method of diversifying and upgrading the jelly products to meet various consumer demands.
The problem to be solved by the present invention is to provide a rainbow jelly manufacturing method in which the jelly is represented by the color of the natural material and laminated and molded it integrated.
Furthermore, in laminating | stacking and shaping | molding the said jelly, it is providing the method which does not generate | occur | produce interlayer separation in a lamination | stacking boundary surface, and does not mix colors of both laminated jelly.
In order to achieve the above object, the present invention provides a first step of preparing a mixture by mixing 15 to 20 parts by weight of potato starch and 1 to 5 parts by weight of a natural material additive having color; A second step of preparing a primary heating material by pouring water of 5 to 7 times the weight into the mixture and placing it in a heating container and heating it for 8 to 12 minutes at a temperature of 85 to 90 ° C .; A third step of preparing the secondary heating material by heating the primary heating material at a temperature of 75 to 85 ° C. for 3 to 7 minutes; A fourth step of manufacturing at least one second heating material manufactured by the first to third steps by changing the color of the natural material additive; And it provides a rainbow jelly manufacturing method comprising a fifth step of sequentially stacking the secondary heating material in a mold at a temperature of 60 ~ 75 ℃, room temperature cooling for 3 hours or more.
At this time, the natural material additives are at least one red plant selected from the group consisting of bokbunja, Schisandra chinensis, gojija, tomatoes, grapes, red pepper and strawberries; At least one green plant selected from the group consisting of broccoli, lemongrass, chamomile, basil, green tea leaves, kiwi, spinach, garland chrysanthemum, kale, radish and kelp; At least one yellow plant selected from the group consisting of gardenia, sweet pumpkin, orange, grapefruit, mango, carrot, turmeric, persimmon and pineapple; At least one black plant selected from the group consisting of black soybeans, black sesame seeds, black rice, blueberries, and sour mushrooms; Or at least one white plant selected from the group consisting of cabbage, onion, bellflower, garlic and lotus root.
In addition, the natural material additive is preferably a juice prepared by grinding and filtering the plant or a powder prepared by drying the juice.
In addition, it is preferable to continuously stir in one direction while heating the mixture of the second step and the primary heating material of the third step.
In addition, it is preferable to apply an aqueous solution of dextrin to the lamination interface when the secondary heating material is laminated to the mold.
Rainbow jelly manufacturing method according to the present invention is implemented in a variety of colors in one jelly to improve the visual flavor of the jelly.
In addition, since the separation between layers does not occur at the lamination boundary, and the colors of both jelly at the lamination boundary are not mixed with each other, the colors are distinctly distinguished, so that vivid color expression of the jelly is possible.
Hereinafter, the present invention will be described in detail.
As a starch gel having an old unique texture, acorn, mung bean, and buckwheat starch are mainly used as a material of jelly, but the materials have a unique color of brown, white and gray. There is a limit to expressing various colors based on the background.
Accordingly, in the present invention, the starch which forms transparent jelly, which does not restrict the color expression, is used as a main ingredient, and potato starch is used as a main ingredient, and a plurality of color mixtures are prepared by using various natural ingredients as additives. Then, the mixture is laminated and molded to prepare rainbow jelly.
Olbange is a perennial plant of the monocotyledonous rice plant, and grows in the shallow water of wetlands such as ditches and rice fields, and grows the stems sideways, while tubers with a diameter of 5-8 mm run at the ends.
The scabbard is also used for medicinal purposes, especially in jaundice, dry stomach, fever, diarrhea, plump, fish blood, etc., has a fragrant, sweet and light flavor, and takes the starch from tubers and ingests the stomach strong. It is known.
However, the utilization as a food is not activated, not only do not save the medicinal value of the all five, but also left the farmland as a situation that damages crops as seaweed.
Starch extracted from the tuber of the five-year-old even if heat treatment does not fall in the physical properties or texture can be produced by using it to obtain a glossy and chewy texture than the jelly of other materials.
However, when laminating and molding the jelly made from the starch starch, there is a possibility that separation may occur between lamination surfaces due to insufficient adhesiveness of the surface.
In order to prevent this, it is preferable to add highly sticky potato starch to the all-starch starch.
Potato starch is transparent and stretches long and does not age well even at low temperatures and forms a soft, sticky gel.
Potato starch improves the hardness, cohesiveness, adhesiveness and toughness of the jelly, and in particular, increases the adhesiveness of the surface of the jelly so that the jelly sticks together when the jelly is laminated and molded.
The starch starch and potato starch may be used after harvesting the sediment by removing the shell of the starch and potato tubers, or by using a commercially available product.
First, a starch mixture is prepared by mixing 15-20 parts by weight of potato starch with 100 parts by weight of starch.
When the content of the potato starch is less than 15 parts by weight, the hardness of the prepared jelly is lowered, resulting in lower texture and separation between the laminated surfaces of the jelly. When the content is more than 20 parts by weight, the sweetness and transparency are lowered, which is not preferable.
Next, a jelly raw material mixture is prepared by adding a colored natural material additive to the starch mixture.
The natural material additives are not limited to the use of materials that can express the color of the jelly using natural materials other than artificial dyes, and natural materials suitable as color additives of the jelly include red plants, green plants, yellow plants, and black plants. And white plants.
Yellow plants include gardenia, sweet pumpkin, orange, grapefruit, mango, carrot, turmeric, persimmon, pineapple, etc. Black plants include black beans, black sesame seeds, black rice, blueberries, and sour mushrooms. , Onions, bellflower, garlic and lotus root.
The natural material additives may be added to the starch mixture in the form of juice prepared by pulverizing and filtering the natural material or the juice is dried, the natural material additive based on 100 parts by weight of the starch starch powder It is preferable to add 1-5 weight part.
If the additive of the natural material is less than 1 part by weight, the color of the additive may not be sufficiently expressed, and a small amount of the useful ingredient contained in the additive is not added to the jelly. Separation occurs.
Next, 5-7 times the weight of water in the jelly raw material mixture is poured into a heating vessel and heated for 8 to 12 minutes at a temperature of 85 ~ 90 ℃ to obtain a sol primary heating material.
If the heating temperature is less than 85 ° C., the starch and the additives are not sufficiently entangled. If the heating temperature is more than 90 ° C., the cohesiveness is lowered and the chewy texture of the jelly is reduced, which is not preferable.
Next, when the heating temperature of the primary heating material is lowered to 75 to 85 ° C. and heated for 3 to 7 minutes, a secondary heating material is obtained. The moisture of the primary heating material becomes a high-temperature steam so that the primary heating material is cooked evenly. At the same time, the next step is to facilitate the molding of the jelly.
While heating, stir continuously in one direction to prevent starch and additives from sticking to the floor.
The secondary heating material exhibits a unique color of the additive according to the type of the additive, and the secondary heating material of various colors may be obtained by manufacturing the additive with different types of additives.
In order to realize a variety of colors in one jelly to prepare a second heating material as described above by differentiating the color of the natural material additives after the jelly must be laminated and molded after the production of the natural material additives of different colors. The process is repeated to prepare at least two kinds of secondary heating products.
In addition, since the secondary heating materials to be laminated in the lamination process, which is the next step, must be laminated before the dishes, the production of the two or more secondary heating materials is preferably performed simultaneously.
When the production of a plurality of secondary heating is completed, the secondary heating is poured sequentially into a molding mold to produce a rainbow jelly, in order to integrate the jelly by each color is well bonded to each other forming the mold before the secondary heating is cooled Poured sequentially, laminated and cooled.
The temperature of the secondary heating material when laminating to the mold is suitable for 60 ~ 75 ℃, below 60 ℃, the hardness of the jelly is lowered like bamboo porridge and the adhesion between each layer is lowered, the interlayer separation occurs, 75 ℃ If exceeded, the colors between the layers are mixed with each other, which is undesirable.
When the secondary heating materials are stacked in the hot state as described above, a part of the heating materials are mixed with each other at the interface between each layer, so that the interface is not clear and blurred.
In order to prevent this, it is preferable to apply dextrin, which is used as a hydrolyzate of starch, as a binder, a thickener, or the like to the interface.
Generally, dextrin is produced by hydrolysis of starch obtained from various natural products such as wheat, rice, corn, and tapioca. There are three types of white, pale yellow, and yellow depending on the degree of hydrolysis.
White dextrin is dissolved at least 40% in cold water and completely dissolved in hot water, and pale yellow and yellow dextrin are completely dissolved in cold and hot water, so that the dextrin is dissolved in water and applied to the interface when the secondary heating is laminated.
By selecting and applying the most harmonious color among white, pale yellow, and yellow dextrin according to the color of both sides of the interface, the color of both sides of the interface is prevented from being mixed with each other. As adhesive strength is increased, it helps to prevent delamination.
The dextrin can be purchased commercially.
After cooling the heated materials stacked in the molding die at room temperature, after 3 hours, the rainbow jelly according to the present invention is completed.
The rainbow jelly may be expressed in various colors according to the kind of additives, and it is possible to represent a plurality of colors in one jelly according to the number of laminations.
In addition, since the additive is made of a natural material, there is no harm to the human body, and since the useful ingredient contained in the additive material is contained in the jelly, it is possible to produce a higher quality jelly in terms of nutrition.
Hereinafter, the present invention will be described in more detail based on the following examples, comparative examples and test examples.
It is to be understood, however, that the invention is not to be construed as limited to the embodiments set forth herein, but is capable of modifications and equivalents within the spirit and scope of the invention. Will be apparent to those skilled in the art to which the present invention pertains.
1>≪ Example 1 >
First, 3.5 kg of starch mixtures were prepared by mixing 500 g of potato starch with 3 kg of starch.
Also, bokbunja powder, gardenia powder, lemongrass powder, chemomile powder, and basil powder were prepared as natural ingredients.
30 kg of bokbunja powder was added to 970 g of the prepared starch mixture to prepare 1 kg of bokbunja added mixture, and 1 kg of gardenia added mixture was prepared by adding 30 g of gardenia powder to 970 g of the starch mixture.
In addition, 990 g of the starch mixture was mixed with 5 g of lemongrass powder, 3 g of chamomile powder, and 2 g of basil powder to prepare a 1 kg herb mixture.
Next, three pots were prepared, each containing 1 kg of each mixture separately, 6 kg of water was poured into each of them, and the mixture was heated for 10 minutes while continuously stirring in one direction at a temperature of 87 ° C.
When the mixture was heated for 10 minutes, the rice cake was tangled like porridge. At this time, the heating temperature was lowered to 80 ° C. and stirred slowly for 5 minutes while stirring.
Next, the moist mixtures were poured into a mold, and the mixtures were poured as soon as possible before being cooled so that the three kinds of mixtures adhered well to each other.
Bokbunja addition mixture was first poured into a mold, and then the gardenia addition mixture was poured thereon, and finally the herbal addition mixture was poured to obtain rainbow jelly in which red, yellow and green were arranged in sequence.
Each color of the prepared rainbow jelly is 2cm and the total thickness is 6cm.
2><Example 2>
Except for pouring the bokbunja addition mixture to the mold in Example 1 and then applying the dextrin aqueous solution to the upper surface, pour the gardenia addition mixture on the coating surface and then apply the dextrin aqueous solution again, and finally, the herbal addition mixture was poured Prepared rainbow jelly in the same manner as in Example 1.
1>≪ Comparative Example 1 &
Rainbow jelly was prepared in the same manner as in Example 1, except that the starch mixture was prepared using only starch starch without using potato starch in Example 1.
2>Comparative Example 2
The rainbow jelly was prepared in the same manner as in Example 1 except that the mixture containing the moxibustion in Example 1 was poured into a mold in a state of cooling to 50 ° C.
Test Example 1 Measurement of Springiness
The elasticity of the rainbow jelly of Examples 1 and 2 and Comparative Examples 1 and 2 was measured.
Elasticity is a property that the deformed material is returned to its original state upon removal of force, and it can be said to be a feeling of elasticity such as rubber in the mouth.
The measurement was performed using a texture analyzer (TA-XT2, Stable Micro Systems, UK), and the rainbow jelly was placed on a plate and then 70% of the deformation of the rainbow jelly was detected using a 2 mm probe plunger. It was crimped twice at a rate of 2.0 mm / s to occur, and the results are shown in Table 1 below.
As can be seen from the above results, it can be seen that Examples 1 and 2 prepared by mixing potato starch and pouring the mixture into a mold before cooking, have a higher elasticity than the comparative example, and using only starch starch without using potato starch. It can be seen that the elasticity of Example 1 is the lowest, it is advantageous in terms of elasticity to add potato starch in the production of rainbow jelly, it is preferable to pour quickly before cooking when the mixture is poured into the mold.
Test Example 2 Adhesion Strength Test at Interface
When the rainbow jelly of Examples 1 and 2 and Comparative Examples 1 and 2 were cut into sections of 15 × 15 × 60 mm (width × length × length) so that the colors were arranged in the lengthwise direction, and both ends in the lengthwise direction were cut off. The location of the fracture surface when measured to the tension is shown in Table 2 below.
Ten specimens were prepared for each group, and the location of the fracture surface was divided into the interlayer and non-interface positions.
Interlayer interface
(Count)
Position not boundary
(Count)
In Example 2 of Table 2, it was found that most of the fracture at the position other than the boundary surface resulted in excellent adhesion at the boundary surface.
In addition, in Comparative Example 2 poured into the mold in the state that the mixture is cooled, it is determined that the phenomenon that each layer is separated during the handling of the rainbow jelly prepared by the method of Comparative Example 2 is all broken at the interface.
Test Example 3 Sensory Test
The rainbow jelly of Examples 1 and 2 and Comparative Examples 1 and 2 were measured by five-point scales for color, taste, aroma, and overall palatability of five men and five women, respectively, and their average values are shown in Table 3 below.
(5: very good, 4: good, 3: normal, 2: bad, 1: very bad)
As shown in Table 3, the color was most evaluated in Example 2 in which the aqueous solution of dextrin was applied to the interlayer interface, dextrin applied to the interlayer interface to prevent mixing of the mixture of both interfaces, the color of each layer is clearly This is because it is classified.
In the evaluation of the taste, it can be seen that the Example is higher than the Comparative Example, which is improved by the hardness, cohesiveness, adhesiveness and toughness characteristics of potato starch and by molding at high temperature, thereby improving the elasticity and flicker of rainbow jelly and affecting the texture. Judging.
There was no significant difference in the evaluation of the flavor, Example 2 received the highest evaluation in the degree of preference, and the comparative example was evaluated as low, and when the rainbow jelly was prepared by adding potato starch to the starch to prepare a mixture showing the color It can be seen that it is preferable to prepare a rainbow jelly by laminating and molding the mold before the dishware, and it is more preferable to apply an aqueous solution of dextrin to the interface when laminating the mold.
As described above, according to the rainbow jelly manufacturing method of the present invention, after mixing potato starch with oval open starch, various colors of natural ingredients as additives are prepared to produce a mixture showing color and then the mixture is in a hot state. By manufacturing rainbow jelly by laminating and molding, various colors are expressed in one jelly to improve the visual flavor of the jelly, and also improve the adhesive strength at the interface between layers to prevent separation phenomenon during careless handling. This has the advantage of being kept intact.
In particular, when the mixture is laminated and molded, by applying an aqueous solution of dextrin to the lamination interface, the color between the layers can be clearly distinguished and the adhesion between the layers can be improved.
