Claims (12)
- (ⅰ) 미강, 쌀눈, 미강과 쌀눈의 혼합물, 미강 추출물, 쌀눈 추출물, 그리고 미강과 쌀눈의 혼합추출물로 구성된 군으로부터 선택되는 어느 하나를 포함하는 배지를 제조하는 단계;(ⅱ) 상기 (ⅰ)의 단계로 제조된 배지에 MSG (monosodium glutamate)를 첨가하고, 유산균 락토바실러스 사케이를 상기 배지에 접종시키는 단계; 및(ⅲ) 상기 (ⅱ)의 단계로 접종된 유산균을 배양하여 유산균이 보유하고 있는 글루타메이트 디카르복실라아제에 의해 MSG를 GABA로 전환시켜 GABA를 생산하는 단계로 이루어진 유산균 락토바실러스 사케이 (Lactobacillus sakei)에 의한 GABA (γ-Aminobutyric acid)의 제조방법.

- 제 1 항에 있어서, 상기 배지는 탄소원, 질소원, 미량원소, 계면활성제 또는 이의 혼합물을 추가적으로 포함하는 것을 특징으로 하는 방법.
- 제 4 항에 있어서, 상기 탄소원은 글루코오스, 수크로오스, 말토오스, 프럭토오스, 락토오스, 자일로오스, 갈락토오스, 아라비노오스 또는 그의 조합으로 구성된 군으로부터 선택되는 것을 특징으로 하는 방법.
- 제 4 항에 있어서, 상기 질소원은 효모추출물, 소이톤 (soytone), 펩톤, 비프추출물 (beef extract), 트립톤, 카시톤 및 그의 조합으로 구성된 군으로부터 선택되는 어느 하나인 것을 특징으로 하는 방법.
- 제 4 항에 있어서, 상기 미량원소는 마그네슘 설페이트, 소듐아세테이트, 망가닉 설페이트, 페릭 설페이트, 칼슘 클로라이드 및 그의 조합으로 구성된 군으로부터 선택되는 어느 하나인 것을 특징으로 하는 방법.
- 제 4 항에 있어서, 상기 계면활성제는 폴리알코올 지방산, 폴리에틸렌글리콜 지방산, 폴리옥시에틸렌 알코올, 소르비탄 지방산, 폴리옥시에틸렌 소르비탄 지방산 및 그의 조합으로 구성된 군으로부터 선택되는 어느 하나인 것을 특징으로 하는 방법.
- 제 1 항에 있어서, 상기 MSG의 첨가량은 상기 천연성분배지의 1-15 중량%인 것을 특징으로 하는 방법.
- 제 1 항에 있어서, 상기 단계 (c)의 배양은 48-72시간 동안 실시되는 것을 특징으로 하는 방법.
- (ⅰ) 상기 제 1 항, 제 4 항 내지 제 10 항 중 어느 한 항에 따라 수득한 GABA-함유 유산균 배양액으로부터 불용성 성분을 제거하는 단계; 및(ⅱ) 상기 (ⅰ)의 단계로부터 제조된 불용성 성분이 제거된 배양액에 부형제를 혼합하는 단계; 및(ⅲ) 상기 단계 (ⅱ)의 단계로부터 제조된 부형제가 혼합된 배양액을 건조하는 단계로 이루어진 GABA-고함유 분말의 제조방법.
- (ⅰ) 상기 제 1 항, 제 4 항 내지 제 10 항 중 어느 한 항에 따라 수득한 GABA-함유 유산균 배양액으로부터 불용성 성분을 제거하는 단계; 및(ⅱ) 상기 (ⅰ)의 단계로부터 제조된 불용성 성분이 제거된 배양액을 농축하는 단계로 이루어진 GABA-고함유 용액의 제조방법.
