Claims (4)
- 황설탕을 투입하여 저온숙성시킨 한방원자재의 추출물 5 wt%;젓갈 고형물 60wt%;젓갈 발효숙성액상액 35wt%를 포함하여 이루어진 것을 특징으로 하는 한방 엑기스가 첨가된 젓갈 조성물.
- 한방원자재를 세척하는 1 단계;상기 세척된 한방원자재를 맑은 물에 24시간 담그어 부피를 1∼1.5배 증가시키는 2 단계;상기 부피가 1∼1.5배 증가된 원자재와 황설탕을 1:1의 중량비로 용기 내에 층층이 분할하여 절임식으로 삽입·저장하는 제 3 단계;상기 용기 내에 저장된 원자재와 황설탕을 10±2 ∼25±2℃에서 40∼25 일 1차 숙성시키는 제 4 단계;상기 1차 숙성시 사용된 황설탕 중량의 10%에 해당되는 황설탕을 1차 숙성된 원자재와 같이 용기 내에 분할하여 층층이 절임식으로 다시 저장하는 제 5 단계;상기 용기 내에 다시 저장된 1차 숙성 원자재와 황설탕을 5±2 ∼ 20±2 ℃에서 25∼10 일 2차 숙성시키는 제 6 단계;상기 2차 숙성된 원자재를 압착기에 의해 압착하여 추출물을 추출하는 제 7단계;상기 추출된 원자재 5 wt% 에 젓갈 고형물 60wt%와 젓갈 발효숙성액상액 35 wt%를 혼합하는 제 8 단계;상기 원자재와 젓갈 고형물 및 젓갈 발효숙성액상액이 혼합된 혼합액을 14±2℃에서 30일 동안 3차 숙성시키는 제 9 단계를 포함하는 것을 특징으로 하는 한방 엑기스가 첨가된 젓갈 제조방법.
- 제 2 항에 있어서;상기 한방원자재는 누에동충하초, 가시오가피, 매실, 사상자, 우방자, 보골지, 구자, 육종용, 속단, 두충, 원지, 오미자, 토사자, 복분자, 당귀, 황기, 구기자, 녹차, 대추, 감초, 백출, 백봉령, 숙지황, 백작약, 천궁, 육계, 생강, 미나리, 도라지, 홍삼, 쑥, 마늘, 완두콩, 콩나물, 숙주나물, 연근, 솔잎, 사과, 배, 민들레, 씀바귀, 우엉, 갓, 포도, 오이, 가지, 다래, 멍위, 토마토, 고추, 허브로 이루어진 군에서 하나 이상을 선택하여 사용하는 것을 특징으로 하는 한방 엑기스가 첨가된 젓갈 제조방법.
- 제 2 항에 있어서;상기 한방원자재의 1차 숙성시 효소발효제를 더 첨가하는 것을 특징으로 하는 한방 엑기스가 첨가된 젓갈 제조방법.
