ステビアとは、南米(パラグアイ)原産のキク科の植物〔学名:ステビア・レバウディアナ・ベルトーニ(Stevia rebaudiana Bertoni)〕である。このようなステビアとしては、アワユキギク(S.ovata)、ムラサキステビア(S.purprea)、イビフォリア(S.iviforia)、サリシフォリア(S.salicifolia)等が挙げられる。ステビアの茎部とは、ステビアの葉部や根部を除いた茎の部分をいう。
ステビア発酵液の製造に際しては、図1に示すように、まず、ステビアの茎部を多段式温風乾燥機等の乾燥機を用いて70℃以下、好ましくは60℃以下で数十時間乾燥(ステップS1)させた後、平均粒径15μm以下の粉末に粉砕(ステップS2)するのが望ましい。乾燥を60℃以下で行えば、ステビアの茎部に含まれているビタミンや酵母等がより分解又は死滅しにくいという利点がある。また、乾燥粉末の平均粒径を15μm以下とすれば、抽出をより効率良く行うことができる。

次いで、得られた濃縮液を熟成タンク内に投入し、常温で数カ月間(例えば6カ月間)熟成(ステップS8)させる。熟成後は、フィルタープレス等の固液分離装置を用いてろ過(ステップS9)し、ステビア発酵液をろ別するのが望ましい。
このような製造方法によれば、45〜60℃でステビア抽出液の抽出及び濃縮を行うので、ステビアの茎部に含まれているビタミンや酵母等が分解又は死滅するおそれがないという利点がある。また、活性水を用いるので、ステビア発酵液の熟成途中や熟成後における腐敗を防止できると共に、ステビアの茎部に含まれているビタミン、ミネラル成分、糖質、脂質、タンパク質、繊維質等の抽出を効率良く行うことができるという利点がある。
ここで、抽出をステビアの茎部と活性水との混合物に遠赤外線を照射しながら行えば、抽出をより効率良く行うことができるという利点がある。前記混合物に遠赤外線を照射するには、前記混合物が投入される加熱装置の加熱槽の外面等に遠赤外線放射セラミック(アルミナ等)の粉末を含む塗料を塗布等しておけばよい。

〔第3実施形態〕
第3実施形態に係る家畜用***洗浄剤は、第1実施形態の方法で製造されたステビア発酵液を含有するものである。
この家畜用***洗浄剤は、そのままの状態で又は活性水等により適度な濃度に希釈してから、家畜の***に塗布することができる。塗布方法としては、家畜の***(乳頭)に非接触で塗布可能なスプレー塗布等が好適である。
このような家畜用***洗浄剤によれば、既述のステビア発酵液を含有し、***炎の原因となる黄色ブドウ球菌等の細菌やウィルス等に対する抗菌効果に優れているので、家畜が***炎にかかりにくいという利点がある。これは、ステビア発酵液が抗菌効果に優れた物質を含んでいるからであると考えられる。

〔ステビア発酵液の製造〕
ステビアとしては、アワユキギク(S.ovata)を用いた。このステビアの茎部を多段式温風乾燥機を用いて70℃で24時間乾燥させた後、平均粒径15μmの粉末に粉砕して乾燥粉末を調製した。

そして、2時間放冷してからフィルタープレスを用いてろ過し、ステビア抽出液をろ別した。その後、得られたステビア抽出液の濃縮を、真空濃縮装置を用いて減圧下(500mmHg)かつ45℃で糖度が15になるまで行った。
次いで、得られた濃縮液を熟成タンク内に投入し、常温で6カ月間熟成させた。熟成後、フィルタープレスを用いてろ過し、ステビア発酵液をろ別した。
得られたステビア発酵液の成分分析(食品衛生法に基づく指定検査機関である財団法人広島県環境保健協会・生活科学センターが実施)の結果を表1に示す。なお、このステビア発酵液の糖度は15であり、酸化還元電位は−70mVであった。

〔実施例1(搾乳牛の***炎に対する治験例)〕
上記で得られたステビア発酵液からなる家畜用健康飲料を、日本国・島根県内の牧場で飼育されている搾乳牛(十数頭)の飼料に1頭当たり30〜50mL/日の割合で添加した。添加を開始(開始日:2003年10月10日)してからほぼ1カ月ごとに、各搾乳牛からの搾乳に含まれる体細胞数(1mL当たり)を朝晩1回ずつ測定(検査頭数:13〜17頭)し、搾乳牛1頭当たりの平均体細胞数(1mL当たり,朝晩の平均値)を算出した。その結果を表2に示す。
