Abstract

PURPOSE:To obtain a purified starch with the residual sulfurous acid content lowered efficiently wherein the number of bacteria is low, by aerating a starch emulsion before drying while keeping is acidic, thereby removing the residual sulfurous acid and simultaneously sterilizing it. CONSTITUTION:After corn starch is immersed in a sulfurous acid solution having a concentration of 0.2-0.3% at 46-52 deg.C for 40-48hr, separation of germs, grinding, separation of proteins, and purification are carried out to obtain a starch emulsion having a residual sulfurous acid content of 50-100ppm and a number of bacteria on the order of 10<4>. A mineral acid is added to the starch emulsion, and aeration is carried out at 50 deg.C or below for 0.2-4hr while the pH is maintained at 3.5 or below, thereby removing the residual sulfurous acid and simultaneously lowering the number of bacteria in the emulsion. The treated emulsion is dried to obtain a purified starch having a residual sulfurous acid content of 30ppm or below.
