Abstract

PURPOSE:To contrive to carry out seed subculture without lowering neither growth of L-sorbose producing microorganism nor oxidizing ability, by successively carrying out seed subculture using part of seed culture solution as a seed cell and separately doing main culture by using the residual seed culture solution. CONSTITUTION:In producing L-sorbose by subjecting an L-sorbose producing microorganism to seed culture and by carrying out main fermentation by fermentation method of batch type, seed subculture is carried out by successively using part of seed culture solution as a seed cell. On the other hand, main fermentation is carried out by using the residual seed culture solution. Namely, growth and oxidizing ability of the L-sorbose producing organisms are not deteriorated at all and can be semipermanently maintained by using part of the seed culture as the seed cell and carrying out the seed subculture for the next batch and preparation of the seed cell going through several stages in each batch can be omitted. Amount and time of seed subculture are harmonized with amount and time of the main fermentation and the main fermentation can be successively repeated in parallel with the seed subculture.
