Abstract

PURPOSE:To enable selective elimination of component causing aged smell without deteriorating the taste and flavor of brewed liquor and to improve the quality of liquor, by contacting a liquor with an adsorbent consisting of a dealuminized Y-type zeolite. CONSTITUTION:A Y-type zeolite is dealuminized e.g. by high-temperature steam treatment to an SiO2/Al2O3 molar ratio of >=10. The dealuminized zeolite is used as an adsorbent and is made to contact with a brewed liquor at room temperature. The treatment can be carried out either by batch process comprising the addition of a prescribed adsorbent to a brewed liquor in each batch treatment or a continuous process comprising the transfer of brewed liquor through a column packed with the adsorbent. The used adsorbent can be regenerated and reused by contacting with a harmless solvent such as ethanol or steam in liquid state or gaseous state, thereby removing the adsorbed substances. The quality of the brewed liquor can be maintained in excellent state by this process without changing the principal characteristics of the liquor such as acidity, sugariness, amino acid content or pH.
