Abstract

PURPOSE:To advantageously produce yeast fungal cells, capable of providing an yeast extract with a high glutathione content, by cultivating a glutathione- producing yeast belonging to the genus Saccharomyces in a specific culture medium and forming a remarkable amount of the glutathione in the fungal cells. CONSTITUTION:A glutathione-producing yeast belonging to the genus Saccharomyces is cultivated in a culture medium prepared so as to provide 0.1-1.0 ratio of zinc ion content to iron ion content and 0.3-2.0ppm iron ion content and a remarkable amount of glutathione is produced and accumulated in the fungal cells. If the concentrations of zinc ions and iron ions in the culture medium are in optimum states and copper ions are added so as to provide 0.0005-0.5ppm, the amount of the fungal cells and amount of the accumulated glutathione are remarkably increased. Furthermore, yeasts with a large amount of accumulated glutathione with excellent growth of fungal cells are obtained by adding calcium pantothenate, inositol and pyridoxine to the culture medium so as to provide 0.04-40ppm calcium pantothenate, 0.02-1000ppm inositol and 0.0001-1.0ppm pyridoxine.
