れ、また下部に対流加熱を主目的としたシーズ式
ヒーター等が用いられていた。しかし高温域
(220〜250℃)でこげめをつけようとして、上部
ヒーターの消費電力を大きくすると、中温域
(130〜180℃)のケーキや菓子類の調理物の表面
がこげすぎるという問題があつた。そこで、高温
域の調理(魚焼き等)で十分なこげめをつけよう
とすると、長時間加熱する必要があり、そのため
水分の抜けたパサパサの被調理物となつてしまつ
た。
