[Detailed Description of the Invention] The present invention absorbs water to the core of rice grains to make them soft on the inside, and removes as much moisture from the outer surface as possible to produce steamed rice that is easy to handle, thereby obtaining steamed rice suitable for sake brewing. This invention relates to a rice steaming device suitable for.

Conventionally, in order to obtain steamed rice, a vertical rice steamer is used, in which steam is ejected downward, thereby steaming the rice.

The reason for adopting the method of ejecting steam downward is as follows. In other words, steam itself has the property of rising slightly, and when it is ejected downward, when it reaches the limit of its ejection power, it automatically changes its direction upward, and the steam in both directions can be used for steaming rice. It is from.

Therefore, the rice can be steamed by the steam that is directly hit by the steam that is ejecting downward, and the rice that is piled up above the turning point passes through the gaps between the rice grains and rises up. However, this method alone cannot steam all the rice evenly, especially in the center of the rice steamer. This is because the steam does not reach the rice located in the center of the rice steamer.

The present invention was devised in order to eliminate these drawbacks, and the cylindrical wall of the vertical rice steamer 1 is tapered to a tapered shape. Steam pipes 5a and 5b that can blow steam downward from the holes are provided so as to intersect in a cross shape, and a large number of holes provided in the inner circumferential wall immediately above these two steam pipes 5a and 5b are used to inward the steam pipes 5a and 5b. A circular steam pipe 7 capable of spouting steam horizontally toward the rice steamer 1 is provided along the cylindrical wall of the rice steamer 1.
A steam pipe 4 is installed on the bottom of the pipe to allow steam to be spouted upward from a number of holes provided in the upper circumferential wall. By making it possible to steam rice in this way, the rice located in the center of the rice steamer can be steamed evenly, resulting in steamed rice that is extremely easy to break, and the work efficiency can be improved. This is what I did.

A moat wall 3 having a mountain-shaped cross section is provided on the bottom wall 1a, and therein is provided a steam pipe 4 capable of ejecting steam upward from a number of holes provided in the upper circumferential wall. The upward steam ejected from the holes in the steam pipe 4 is ejected into the rice steamer 1 through a number of holes 3a arranged in rows in the field wall 3. This steam is used to preheat the inside of the rice steamer 1 and to steam the rice deposited on the bottom of the rice steamer 1. It goes without saying that the size of the hole 3a should be such that a grain of rice cannot pass through it.

There are two steam pipes 5 at the bottom of the rice steamer 1.
The steam pipes 5a and 5b are arranged so as to intersect in a cross shape, and a number of holes 6 are provided in the lower circumferential walls of both steam pipes 5a and 5b so that steam is ejected downward.

Then, the cylindrical wall of the rice steamer 1 below the steam pipes 5a, 5b is narrowed into a tapered shape as shown in FIG. In this way, the downward steam ejected from the holes of the steam pipes 5a and 5b tends to concentrate at the center of the tapered cylinder of the rice steamer 1, and from the point at which the steam exceeds the limit of the injection force, it starts to direct upward. Since the rice is changed, the rice located in the center of the rice steamer 1 can also be steamed evenly.

Directly above the steam pipes 5a and 5b, a steam pipe 7 is arranged in a circular shape along the cylindrical wall of the rice steamer 1, and a large number of holes are provided in the inner peripheral wall of the steam pipe 7, so that steam is ejected horizontally inward. This steam can steam the rice in the vicinity, and as in the case above, the steam that has passed the turning point passes through the gaps between the rice grains and rises above it. Some rice can be steamed.

As shown in FIG. 3, if the intake port 7a of the steam pipe 7 is arranged approximately tangentially to the circularly arranged steam pipe 7, the steam will travel in the pipe as if swirling, and Steam can be used effectively.

Note that if the integrated area of the downward holes provided in the steam pipes 5a, 5b is made to be the same as the inner peripheral area of each steam pipe 5a, 5b, the steam pipe 5
There is no change in the pressure of the steam entering a, 5b and the pressure of the steam exiting from the hole, and the momentum is constant, so the steam can be used effectively.

The steam sent to the steam pipes 4, 5a, 5b, 6, 8a, and 8b is all drawn from the same steam regulating tank (not shown), and there is no need to install valves or pressure gauges along the way. This is a common practice.

The rice steaming device according to the present invention has a vertical rice steamer 1 with a tapered cylindrical wall, and inside the rice steamer 1, a steam pipe capable of jetting steam downward from a number of holes provided in the lower circumferential wall. 5a and 5b are provided so as to intersect in a cross shape, and these two steam pipes 5
A, 5b, a circular steam pipe 7 is provided along the cylindrical wall of the rice steamer 1, and is capable of ejecting steam horizontally inward from a number of holes provided in the inner circumferential wall.
Further, on the bottom of the rice steamer 1, there is a steam pipe 4 that can blow steam upward from a number of holes provided in the upper peripheral wall.
Since this is provided, rice can be steamed by combining the steam jetting downward, the steam jetting horizontally, and the steam jetting upward. Therefore, steamed rice with good texture can be obtained, and the working efficiency can be improved.

Note that since the rice steamer 1 is vertical, the steam acts effectively and is more economical than a flat rice steamer. Additionally, when the moisture contained in the rice grains turns into steam and evaporates, it generally generates latent heat of vaporization, and in the conventional case, the temperature in the upper layer of the rice steamer 1 rises to 100℃ due to this. However, if the rice steamer 1 is vertical, it is difficult for steam to escape due to the resistance of the rice accumulated inside it, and the temperature rises slightly due to the pressure change at that time. Since the temperature can be maintained at about ℃, the starch is sufficiently converted into alpha, and the strength of the koji and the alcoholization rate of fermentation are also improved. Note that the effect is greater if the steamed rice outlet is provided at the lower end of the rice steamer 1 as shown in the illustrated example.
