Abstract
PURPOSE: To increase the expandability and restorability of YUBA (dried bean curd), to improve its palatability, and to increase the film-forming speed of YUBA, by the combined use of a pH buffering agent and an alkali salt of a weak acid in the preparation or processing of YUBA.
CONSTITUTION: A pH buffering agent and an alkali salt of a weak acid are added in combination in the preparation of YUBA from soybean milk, or YUBA prepared by conventional method is treated with the above agents in combination.
