Abstract

PURPOSE: To prepare ethanol in high yield stably for a long term, by fermenting a saccharide with a microorganism entrapped in a water-insoluble high polymer.
CONSTITUTION: A lump of ice containing a microorganism, capable of fermenting a saccharide to produce ethanol, e.g. Saccharomyces cerevisiae or Zymomonas mobilis, is dispersed in an organic solvent containing a water-insoluble high polymer, e.g. cellulose acetate or polyacrylonitrile, dissolved therein, and the organic solvent is then removed to give an immobilized microorganism in which the lump of ice containing the microorganism capable of producing the ethanol is entrapped in the water-insoluble high polymer. A solution containing a saccharide, e.g. glucose or sucrose, is brought into contact with the resultant immobilized microorganism and fermented.
