Abstract

PURPOSE: To provide a product resembling fermented soybeans having a different flavor, by inoculating Bacillus natto into beans other than soybeans, and cultivating the Bacillus natto.
CONSTITUTION: Black soybeans, peas, AZUKI beans, broad beans, etc. are dipped in water and boiled. After cooling, the beans are steamed in a steamer and inoculated with Bacillus natto at 70W80°C to carry out the cultivation for 6hr. Bacillus natto is further inoculated thereinto and kept at 30W35°C to give the aimed product resembling the fermented soybeans.
