Abstract

PURPOSE: Crushed mustard seeds are dipped in water, drained and added to a desired wet food product, thus shortening the aging period to produce a wet food product containing mustard seeds in a short time.
CONSTITUTION: When a wet food product containing mustard seeds is produced by a usual method, the crushed mustard seeds are dipped in water 3W50 times the quanity of the seeds for about 5W30min preferably at room temperature, then drained in a usual manner. The resultant crushed seeds are added to a desired food product and the food product is bagged up and aged at room temperature for about 10W30 days.
