Abstract

CONSTITUTION: 0.1W10pts.wt. calculated as phosphorus atom based on 100pts.wt. casein of phosphoric acids or their salts (orthophosphoric acid, metaphosphoric acid, pyrophosphoric acid, polyphosphoric acid, etc.) is added to a milk protein solution consisting essentially of casein, 1.1W10pts.wt. calculated as calcium atom based on 100pts.wt. casein of polyvalent metal compound (calcium chloride, calcium sulfate, magnesium phosphate, etc.), is added to the milk protein solution, which is treated with a proteolytic enzyme (protease, trypsin, papain, etc.), and heat-treated at a pH of 4.6W8.5 at 60W100°C. The thermally coagulating solid substance thus obtained can be used as an ingredient for artificial meat or an additive.
