Abstract

PURPOSE: Food oil is solubilized into an aqueous solution containing protein and water-soluble saccharide to give a TEMPURA or fry coating improver which can keep the coating soft for hours and from becoming fragile, thus preventing the deterioration of texture.
CONSTITUTION: A food oil such as sesame oil, safflower oil or soybean oil is solubilized into an aqueous solution containing 0.005wt% protein of more than 10,000mol weight such as skim milk powder, sodium casein or soybean protein and more than 35wt% soluble saccharide such as sucrose, fructose or dextrin and they are emulsified to give the objective TEMPURA or fry coating improver.
