Abstract

PURPOSE: Cyclic dextrin or a mixture thereof with noncyclic dextrin is added to the solvent for extracting roasted coffee beans to make essense of coffee with almost the same flavor as regular coffee.
CONSTITUTION: A crushed product of roasted coffee beans is extracted with water containing more than 1% of cyclic dextrin or a mixture thereof with noncyclic dextrin (in which the content of the cyclic dextrin is higher than 10%) at 50W90°C. At this time, if an aqueous alcohol containing 10W60% alcohol is used as a extraction solvent, the coffee extract becomes rich in low-boiling volatile flavors.
