Abstract

PURPOSE: To prepare distilled liquor free from the characteristic odor and bitter taste of conventional distilled liquor, and having excellent taste and flavor, by adding raisins and passion fruits to the secondary unrefined "sake" prepared mainly from rice, and distilling the mixture after aging.
CONSTITUTION: The primary "moromi" (unrefined sake) obtained by the primary fermentation of rice and seed "koji" (malted rice), is mixed with steamed rice, and subjected to the secondary fermentation for seven days. The secondary "moromi" thus obtained is mixed with 20% of ripe passion fruits and 20% of crushed raisins. After aging the mixture for 8W11 days, it is distilled with a simple still.
