Abstract

PURPOSE: Noncarbonated beverage is filled in thin-wall cans and the cans are tightly sealed with nitrogen gas by conventional processes and sterilization operations are continuously applied to these cans, thus producing canned noncarbonated beverage sealed with nitrogen gas free from rotting and denaturing caused by microorganisms and from abnormal swelling of cans.
CONSTITUTION: Canned noncarbonated beverage sealed with nitrogen gas is produced by a conventional process composed of the formulation step for formulating the content of juice or nectar, the sterilization step for heating the content to about 95°C, the cooling step for cooling the content to lower than 5°C, the nitrogen-dissolving step for dissolving nitrogen gas in the content by getting the gas into contact with the content, the filling step for filling thin-wall cans with the nitrogen-dissolved content and the sealing step for lidding the cans and sealing the lid by rolling. Then, in sequence, the sealed cans are subjected to sterilization treatment at 60°C for a period longer than 10min or treated with a pasteurizer to effect the equal value of sterilization.
