Abstract

PURPOSE: Extract of beefsteak plant is used as a raw material to produce a king of beverage that adequately has comfortable smell of beafsteak plant, contains high levels of vitamins and minerals and gives refreshing feel.
CONSTITUTION: Leaves, stems, and/or seeds of red and/or green beefsteak plant are soaked in a solution of organic acid such as citric, tartaric or succinic acid at room temperature for a period of about 10hr W about 10 days, preferably of about 1W3 days to prepare an extract containing nourishing and flavoring components of beefsteak plant. The extract is directly used as a kind of beverage or diluted with water or carbonated water, when necessary, combined with additives for beverage such as sweetenings, thickener or pigments.
