Abstract

PURPOSE: To reduce the swelling and gelatinizing temperature of a starch and prepare a starch material having improved water retension on gelation, by coating the starch with a food material consisting of a vegetable proten essentially, and spray-drying the coated material under heating.
CONSTITUTION: A suspension of starch or a grain flour containing the starch is mixed with a dispersed and dissolved solution of a food material consisting of a vegetable protein, e.g. separated soybean protein or wheat gluten at a weight ratio between the starch of the grain flour containing the starch and the vegetable protein in the range of 1:0.03W1:0.3, preferably 1:0.05W1:0.2. The resultant mixture is then heated to 100W150°C, preferably 110W130°C, and spray-dried while being kept in the temperature range for 1W15min.
