Abstract

PURPOSE: To carry out the fine emulsification of oil and fats safely and easily by using a hidrophilic starch sugar ester of an aliphatic acid or a reduced starch sugar ester of an aliphatic acid as an emulsifier composition along with a specific compound.
CONSTITUTION: A hydrophilic starch sugar ester of an aliphatic acid or a hydrophilic reduced starch sugar ester of an aliphatic alcohol such as ethylene glycol, an aliphatic acid ester of a polyhydric alcohol and an alkylene oxide adduct of a polyhydric alcohol are incorporated to form an emulsifier composition. A hydrophilic starch sugar ester is used along with a polyhydric alcohol and, by the mutual action thereof, oil and fats are converted to a fine emulsion easily and safely.
