Abstract

PURPOSE: Segment of peeled orange are rapidly frozen in a coolant and disconnected into sacs of pulp by giving impacts, whereby cell units of pulp of orange fruit are collected without loss of nutrient in a short operation time.
CONSTITUTION: Segments of organe peeled by a usual method are rapidly cooled with a coolant such liquefied nitrogen to lower than -50°C. Then, impacts are given the frozen segments with, e.g., a crusher equipped with revolving blades to crush the surface membranes of the segments and simultaneously disconnect the sacs of pulp and the crushed membranes are separated off.
