Abstract

PURPOSE: Incompletely heat-denatured albumen is used to produce an albumen- containing food material with improved texture and quality.
CONSTITUTION: After imcompletely denatured by heating at 61W75°C for 0.5sec to 30min, preferably at 62.5W70°C for 0.5sec to 10min, liquid albumen is subjected to high-pressure hmogenization preferably at higher than 50kg/cm2. Then, the product is dried and pulverized by usual methods and, before or after the heat treatment, at least one of food materials except albumen such as materials for pudding mainly containing milk and dairy products, sweeteners and a gelling agent is added thereto.
