Abstract

PURPOSE: The yeast is removed from a part of the culture medium taken out of the cultivation tank and made to return to the cultivation tank, simultaneously a part of the filtrate is pasteurized and made to return to the tank, thus producing the yeast with effective exclusion of undesirable microorganisms and no reduction in the activity of the yeast.
CONSTITUTION: A part of the culture mixture in the cultivation tank I is introduced in the yeast separator II (arrow 2) and the separated yeast is made to return to the tank I (arrow 3). In the meantime, the liquid separated is sent to the pasteurizer III (arrow 4) and sent through a pipe line back to the tank I (arrow 5). Since the yeast is not subjected to pateurization, the activation becomes not low, whereas undesirable microorganisms in the liquid are deactivated or killed by the pasteurization. The pasteurization treatment is, e.g., one with a chemical such as an acid, base or hydrogen peroxide. The addition of a carbon source as the major nutrient and other nutrients or aeration, when the cultivation is conducted aerobically, is preferred with respect of preventing the reduction in yeast activity.
