Abstract

PURPOSE: To prepare good-tasting, highly nutrious processed chicken having low cholesterol content and excellent preservability, by immersing raw chicken in a sauce obtained by ripening garlic and various other spices, and heating the chicken under pressure thereby effecting the dewatering and defatting of the chicken.
CONSTITUTION: A sauce is prepared by mixing a seasoning obtained by ripening garlic and various other spices, with soy sauce, sugar, gum oil, a chemical seasoning, and gravy. Raw chicken is immersed in the sauce thus prepared for 2W3 hours, and heated at about 120W150°C for about 2W5 minutes under the pressure of about 3W4.5kg/cm2 to effect the dewatering and defatting of the chicken.
