Abstract
PURPOSE: To prepare a bifun (a noodle made from a nonglutinous rice flour) of good quality without stickiness, by mixing a homegrown rice with starch and a binder, adding water to the mixture, and kneading, heating, molding and drying the dough thus obtained.
CONSTITUTION: 50W70pts.wt. a homegrown rice pulverized to an average particle size of about 50 mesh is mixed with 50W30pts.wt. starch, e.g. potato or sweet potato starch, 0.5W2.0pts.wt. a binder, e.g. egg white or gelatin, and 20W35pts.wt. water. The mixture is then fed into a raw material feed tank 4, and introduced from a bottom opening 6 into a cylinder 1 by rotating an agitating and feeding device 5. The mixture is then fed from a feed zone a to a compression zone b by a flight 2 of a screw shaft 3 driven by a motor 7, heated at 60W90°C, deaerated, and kenaded at 90W110°C in a kneading zone C. The kneaded dough is then introduced into a bend part 10 of a conduit 9, and the outflow of the dough is restricted by a restrictor 11 to heat the dough to 100°C or above at 80W120kg/cm2. The dough is cooled by a crosshead 12 and extruded from a nozzle 13 into a filament, which is dried.
