Abstract

PURPOSE: To obtain white bran for picked vegetables having improved whiteness, not causing decoloration, by bleaching a raw material for white bran with hydrogen peroxide, washing water, dewatering, bleaching it with sodium chlorite (hypochlorite), subjecting it to washing with water and dewatering twice, followed by dechlorination and drying.
CONSTITUTION: A raw material for white bran is subjected to the first process wherein the raw material is bleached with hydrogen peroxide, washed with water, and dewatered. The white bran undergoes the second process wherein it is blended with sodium chlorite or sodium hypochlorite with stirring and allowed to stand so that it is bleached, and the white bran is cleaned with water and dewatered, and these processes are repeated one more time. The white bran is then sent to the third process wherein dechlorination is carried out to make residue chlorine zero, and at last it is dried by the forth process so that the white bran for vegetables seasoned in rice-bran paste is bleached. In the first process flavonoid-based coloring matter contained in the raw material of the white bran can not be removed completely and it is colored in light yellow. The remaining flavonoid-based coloring matter and other coloring matters are decomposed and removed by the second process.
