Abstract
PURPOSE: To improve cut cross-section, gloss, taste, etc. of boiled fish paste and to prolong its preservation without causing its deformation, by irradiating molded paste ingredients for boiled fish paste with microwave intermittently, followed by heating it by steam or direct fire method.
CONSTITUTION: A seasoning, e.g., salt, etc., starch, etc. are added to grund fish meat to give an ingredient, which is molded into "kamaboko" (boiled fish paste) and subjected to setting treatment at 2W5°C for 12hr in a setting chamber. The molded food after treatment is irradiated with microwave for 30sec, the irradiation is stopped for 30W40sec, these operations are repeated for 6W8 times. This method can prevent the deformation and uneven heating of boiled fish paste, which occur when it is heated long in a time. The molded food is conventionally put in a steam chamber at 85W90°C and heated for about 30min, to give a product. The use of both heating methods sterilize boiled fish paste by microwave irradiation, prolong its preservation, and the product free from fish smell, putrid smell, etc. can be obtained more efficiently than a method using steam heating only.
