Abstract

PURPOSE: To prevent the yellowing of green vegetables by the use of a calcium salt.
CONSTITUTION: Green vegetables such as green pepper, spinach, etc., are treated with a dilute aqueous solution of calcium salts containing one or more calcium salts selected from calcium chloride, calcium acetate, calcium gluconate, calcium pantothenate, calcium lactate, and calcium carbonate, e.g. an aqueous solution containing about 10-2W10-3M of calcium chloride.
