Abstract

PURPOSE: In the production of noodles, a powder of pocessed starch with a swelling degree of 3.0W6.0 is added in a specific range to produce noodles with high springiness and stickiness with little deterioration in texture in spite of long-term storage after manufacturing.
CONSTITUTION: When noodles, including chaoz (dumpling stuffed with minced pork) and shao-mai, are produced by using wheat flour, rice flour or buckwheat flour as raw materials, a powder of processed starch with a swelling degree of 3.0W 6.0, which is measured under specific conditions, (the starch is obtained by heating, gelatinizing cooling starch, then drying and crushing and high amylose content is preferred), is added to the raw materials by 1W15wt% based on the raw materials. Then, they are kneaded and made into noodles. According to kinds of products, they are packed as raw noodle, boiled noodle, instant noodle and so on. The resulatant product keeps good springiness and stickiness after cooked and shows no deterioration in texture in spite of long-term storage after manufactured.
